COLLEGE STATION, Texas – The city of College Station is welcoming back an old familiar taste. The La Bodega Baja Taco Bar, a seafood-forward taco concept, has reopened in the city after a 10-year absence, much to the delight of residents who fondly remember the original restaurant.
“We honored the old menu. There’s probably 80 to 85 percent of the old menu still intact, we just added some more.” said Owner Costa Dallis. While keeping some of the fan favorite items on the menu, they intend to offer something more to their customers.
In addition to the menu, Costa Dallis chose to retain some of the aesthetic elements of the original La Bodega Baja Taco Bar in the new location. This includes the usage of some of the framed pictures from the original restaurant, as well as its distinctive color scheme.
“Every space is different. This one you can see all the windows and has a ton of daylight. The other one had really low ceilings. There’s an older, funkier building, so it kind of tailor the look of the restaurant to the space that you’re in.” Dallis explained.
Not just stopping at the historical nods, the owners also plan to introduce a drive-thru window and brunch options within the coming weeks, continually evolving the menu and service methods to serve a wider demographic and meet customers’ needs.
The return of La Bodega Baja Taco Bar certainly brings a nostalgic vibe to College Station, reminding residents of its past culinary scene. It gives both the long-term residents who visited the original restaurant and newcomers the chance to enjoy the restaurant’s seafood-forward taco concept. With expanded offerings and a commitment to honor the original restaurant, La Bodega Baja Taco Bar is poised once again to become a popular destination in College Station.
